is a dish of meat or fish, thinly sliced or pounded thin, and served raw, typically as an appetizer. It was invented in 1963 by Giuseppe Cipriani from Harry’s Bar in Venice originally prepared for the Countess Amalia Nani Mocenigo when he learned that her doctors recommend she eat raw meat.
The dish was named after Vittore Carpaccio, the Venetian painter who was known for his characteristic red and white tones. This was the inspiration for Giuseppe.
Francesco was born in Calabria, Italy, and from a young age enjoyed watching his Nonna make fresh, simple Italian food.
With that imbedded in his DNA, Francesco left his village in Calabria and began his journey through Italy and Germany running restaurants with the typical Italian passion he was born with.
The time has now come for Franceso to bring his childhood village experiences to our own little Village here in the Inner West. Whilst his nature maybe conservative, it’s not until Francesco gets into the kitchen where he is awoken and ready to influence us with his taste and simplicity.
Get ready to have your taste buds transformed and whilst the dish will come across simple, the modern and refined efforts from our Chef will put a twist on the old fashion way of how the Italians cook.
